About The Ebelskiver Lady
A food booth selling ebelskivers (Danish filled pancake balls) at the Fremont Market Sundays year round, and other Seattle markets during the summer.
Ebelskivers (or in Danish - Aebleskiver) are ball shaped pancake or crepe-like treats.
In their home country these are eaten mostly at Christmas time, and in the afternoons with coffee; they would usually either contain apples, or be dipped in jam & powdered sugar.
At The Ebelskiver Lady we make them like the owner's mother made them - a little hollow and stuffed with good things. And we've taken it a step further than mom did; she only served them with jam and butter but we've got a whole menu of delicious fillings for you to choose from: Nutella, peanutbutter, maple syrup, cream cheese, lemon curd, walnuts, fresh fruit, etc.
